Sofitel Kuala Lumpur Damansara welcomes new Executive Chef to heat up Nizza’s kitchen with a new menu!
Bringing with him over twenty years of culinary experience from across hospitality establishments in Europe, America and Asia, Executive Chef Fabrice Bruto is all set to delight diners through his wonderful, exquisitely crafted delicacies.
Prior to joining the hotel, Chef Fabrice served as the Executive Chef at The Langham, Shenzhen, where he further enhances his culinary technique and leadership management skills. Moving forward, he will continue to deliver extraordinary enhancement to Sofitel Kuala Lumpur Damansar restaurants’ dining options and kitchen team.
Monk Fish Bouillabaisse Style, Saffron Potatoes, Glazed Baby Onions
For Nizza’s latest menu, chef highlights a clever combination of French-Mediterranean flavours prepared using traditional cooking style with modern influence, from Tabbouleh Pomegranate to Butternut & Carrot “Velouté”, Risotto in “Bisque” Sauce, Roasted Cod Fish, Whole Sea Bass in Sea Salt Rosemary Crust, Beer Marinated Beef Cheek, Black Angus Beef Tartare Knife Cut and Gravelax Salmon, among others.
Visited the restaurant and sampled some of the signature dishes. Began with Eggplant “Capunanita” – a richly flavoured, sweet and tangy starter, served with homemade smoked duck pepper breast, arugula, pine nuts. So yum when spread on soldier bread. Recommended.
Love this Burrata Mozzarela on Watermelon that makes a great sharing appetizer. Sphere solid outer layer, encasing soft, curdy cheese within, further topped with olive oil espuma and balsamic pearls.
Beetroot Cold Gazpacho Soup, Tomato Bruschetta, Feta Cheese, Peach
Such a gorgeous-looking soup, tastes as good! A famous, healthy chilled soup made primarily from fresh beetroot, comes with feta cheese, peach and tomato bruschetta.
Cauliflower and Fennel Soup, Smoked Salmon, Slow Cook Egg, Lime Caviar, Anchovy Puff
For pasta, we had Potato Gnocchi tossed in mushroom cream with baby morels and hazelnut, finished with truffle notes.
Shared a plate of Risotto too, cooked in “bisque” sauce that gives a rich, flavourful taste.
Stuffed Calamari with Lamb Chorizo & Seeds – acquired taste, nice but we might need more time to adjust our palate to this dish.
For meat selections, check out the juicy, fork-tender Beer Marinated Beef Cheek dressed in “pastozi” savoury, flavours balanced up with eggplant tomato “flan”. Not to forget, the crowd-favourite Black Angus Beef Tartare knife cut to your taste, sided with garden salad and hand-cut French Fries.
Dessert is a bliss with The Nizza Tiramisu – must have when in this restaurant! Other than this, the chef has also created few interesting sweet treat that you don’t normal come by in KL French Restaurant, including this Rhubarb Puree in Peach & Basil Soup, served with ginger ice cream; as well as Chestnuts fondant in White Chocolate & Praline Sauce and Orange Blossom Crisp.
Overall, we had a lovely dinner experience in The Nizza Sofital Kuala Lumpur Damansara. We especially recommend Burrata Mozzarela, Beetroot Cold Gazpacho Soup, Beer Marinated Beef Cheek and Risotto Cooked in ‘Bisque’ sauce.
In addition to the new menu that complements perfectly the restaurant/s concept, Nizza has also a range of signature cocktails which are definitely worth a try.
