Apart from indulgence of excellent seafood spread and creating awareness towards sustainably-harvested seafood, what makes this Norwegian seafood buffet dinner more noteworthy is the arrival of guest chef Markus Dybwad, an experienced chef who has worked in Michelin-starred restaurants such as Heston Blumenthal’s The Fat Duck in the UK.
During this buffet in Lemon Garden Cafe Shangri-La KL Hotel, Chef Markus Dybwad will give the best of his varied cooking-styles to cold water Norwegian seafood and other sustainably-sourced seafood like herring, haddock, cod, Patagonian toothfish, pleasing diners tastebud to full satisfaction.
Begin the meal with salad such as Norwegian Snow Crab Salad with Pomelo and Shallot; Raw Apple, Yogurt, Hazelnut and Smoked Haddock ; Salmon Trout Salad with Cucumber Juice and Pickled Spices; Salmon Trout and Scallop Ceviche, just to name a few. Remember to warm up the tummy with a bowl of Corn Soup Chowder with Haddock Fish, and Bouillabaisse too.
Norwegian Smoked and Marinated Seafood counter is the section we frequent most in Lemon Garden during the buffet, helping ourselves with Smoked Salmon, Smoked Salmon with Earl Grey tea, Smoked Salmon with Black Sesame and Ginger, Smoked Saba Mackerel, Smoked Greenland Halibut, Gravlax with Dill and Mustard Seeds, and Gravlax with Juniper Spice.
Semi Dried Marinated Norwegian Salmon Skewers “Jerky” Style was something interesting to us. As it is named, the salmon is semi-dried, hence leans towards chewy, almost like your beef jerky which is nice to be munched like a snack.
For hot dishes, our favourites during our visit on Thursday night are Escaeche of Capelin and Scallop, Steamed Black Mussels and Deep Fried Haddock with Sesame. Make sure to try out Deep Fried Haddock, it was so good. Golden crispy but not oily, meaty meat to please.
Besides, for Sustainable Fish section, there will be premium Whole Baked Mackerel on Thursday, Whole Salmon Trout on Friday and Saturday. Saw on a tray of “gift” next to the Baked Mackerel, beautifully wrapped with ribbon tied on it. Opened up the parcel, revealing steamed salmon, laced with sweetness released from the fish and julienned vegetables.
While keeping yourself well-fed with these Norwegian seafood delights, the dinner buffet also covers other delicacies such as Japanese sushi, sashimi, Chinese stir fried noodles, satay, pizza, fish tikka, braised beef cheek, wok-fried prawn, chicken curry, lamb shank, grill seabass, and so forth.

Chocolate cake, cheesecakes, macarons, ice kacang, chocolate ice cream, teh tarik ice cream, mango sorbet, raspberry froyo, vanilla frozen yogurt, pandan creme brulee, tiramisu, mini tart, and the list goes on!
