Mixed Salad with Squid Tentacles, Coconut White Curry Lo Sang 白咖喱魷魚須沙律撈生 (RM128/half Portion, RM238/ full portion)
Chef Lam Hock Hin, Chynna Chinese Executive Chef and TV personality has crafted 5 types of lou sang this year, putting together classic ingredients and creative idea to toss for prosperity, wealth, health, and good luck. From Traditional Norwegian Salmon Lo Sang to Mixed Salad with Squid Tentacles, Coconut White Curry Lo Sang, Jackfruit & Strawberry Lo Sang, Caesae Salad with Grated Parmesan Cheese, Norwegian Salmon Lo Sang, Australiz 3 Head Abalone Lo Sang, each Golden Bowl promises to please.
We sampled Mixed Salad with Squid Tentacles, Coconut White Curry Lo Sang, one of the most outstanding lou sang we had this year. A fusion version of CNY traditional dish, using Western style mixed salad as as the main contributors for colour and texture, squid tentacles for more abundance of chewiness, finally dressed with local favourites that all Malaysians proud of – coconut white curry for aroma, richness and hints of coconuty creaminess.
Braised Jade Soup with Monkey Head Mushrooms & Prawn Meat 碧綠鮮蝦猴頭菇羹
We then proceed to Chynna Chinese New Year Set Menu 2, a 8-course menu (included Salmon lo sang) priced at RM298nett per person. Available for order with minimum 5 persons dining together.
Not a usual occasion to have CNY soup that appears in Jade green. The colour was so “healthy” that Summerkid raised his eyebrow, wondering how healthy it would taste like. A small sip of the soup change his impression towards it, entirely. This power soup, made from 50g of blended spinach and boiled with chicken stock for hours showed no trace of raw vegetal flavours, but thick and nourishing with chunks of of prawn meat and monkey head mushroom.
Rock Salt Baked Chicken Stuffed with Ginger and Tea 姜茶鹽鋦雞
Whole chicken marinated with Longjing tea, then cooked in rock salt-bake style. Tender meat asides, tea flavour was just subtly infused. It was actually quite pale to eat only the chicken without any condiments. Hence the liberal amount of minced ginger and tea leaves topped over certainly works great in elevating the flavours – mild spiciness, aroma of tea developed as we munched through the leaves.
Steamed Giant Estuary Grouper Filler with Homemeade Assam Jawa Sauce 亞參白灼翹籠鼎
Everybody loved this dish from Hilton Chynna CNY Menu. Very homey flavours, with good handling of Grouper fish to result in cook-to-just-nice, flaky soft fish meat. Given a bowl of rice, we would first douse it the appetizing, spicy and sourish gravy.
Claypot Stewed Abalone with Sea Cucumber, Sun Dried Oyster, Fatt Choy, Mushrooms and Bran Gluten 蔥油紅燒鮑魚三寶煲
A huge pot of braised goodness, layering sea cucumber, sun dried oyster, fatt choy, mushrooms and abalone, literally Chinese must-have food during Chinese New Year, as these Chinese terms carry auspicious homophones.
Poached Hong Kong Egg Noodle with Mince Chicken Beijing Style 炸醬撈香港全蛋面
Scoop up for your portion once it is served for the best flavours. Thin, long egg noodle, richly coated with “zha jiang” minced meat sauce. Lovely carb dish but can be quite filling.
Panna Cotta, Crushed Peanut Nian Gao 意式奶酪,花生年糕夾
And so we found another innovative way of presenting glutinous rice cake ( nian gao) for our dessert at Chynna Chinese Restaurant Hilton KL Hotel. Smooth, creamy panna cotta, blending with chewiness and sweetness of Nian Gao. Violaa..somehow it works!

Chynna Chinese New Year Menu is available from 11th January till 22nd February, starting from RM238nett per person. Chinese New Year a-la carte and set dim sum is available from 11th January onwards ( normal dim sum and ala-carte menu is not available during this time). Also, enjoy Chinese New Year-themed buffet dinenr at Vasco’s Restaurant, available from 7th February till 22nd February 2016. The buffet is priced at RM188nett per person for Chinese New Year Reunion & New Year Day Dinner ( 7-9 Feb), RM168nett per person for Chinese New Year Dinner ( 10-12 Feb).
