A little bit about Chef Tim Clark:
Chef Tim Clark is renowned for his chocolate art pieces, including the 4 meter long edible chocolate garden. He began his career in Germany, picking up skills in one star Michelin restaurant before taking the role of Executive Pastry Chef with an international luxury cruise liner. He is then accredited as the youngest Executive Pastry Chef in Crown Melbourne, and soon finds himself tantalizing the tastebuds of respected public figures including Nelson Mandela, Rachel Griffiths and Buzz Aldrin. Asides being a Master Pastry Chefs, Tim Clark is also the co-owner of Cacao Fine Chocolates & Patisserie, which earns a reputable stage in Melbourne.
“Creations can be amazing in both visual and taste”, as quoted from Tim Clark. This is successfully proven from all his creative and appealing desserts. Take the Passion fruits Marshmallow Cubes in the Artisanal Afternoon Tea for example, instead of merely lacing marshmallow with passion fruits pulp, Chef Time Clark takes on extra effort by slicing vanilla base marshmallow into strip, coated with dessicated coconut and infused with real essence of passion fruits, extracting from the fruit’s itself for best natural flavours. The end result, a good balance of marshmallow sweetness and tangy notes of passion fruits. No colouring. No artificial flavour.
