Welcoming Chef Soo Kok Lam, the new Sous Chef of Xin Cuisine Chinese Restaurant in Concorde Hotel, Kuala Lumpur. Joining the Xin Cuisine kitchen team back in June this year, Chef Lam has been enticing diners’ tastebus with his classic Cantonese favourites and a host of home-style dishes.
Steamed Chicken with Minced Pork Wanton and Chinese Cabbage in Broth 菜膽云寳上湯雞
The 49-year-old chef hailed from Ulu Langat, Selangor carries more than 33 years of culinary experience, starting his cooking passion since he was 16 years old. He worked his way up from a trainee to a cook, continuously sharpen his cooking skills to whip up delicious Chinese cuisines to all guests at various restaurants.
Braised Vegetable with Fermented Beancurd 溫公齋褒
Throughout the journey, Chef Lam received several recognitions, including Gold Award for The Best Design in Food Display Category at World Chef Competition 2005 in Beijing, China; Special Gold Award as The International Kitchen Emporor in The Asia Challenge Match 2007, Beijing China; and conferred as The International Grandmaster Chef by The International Cooking Union Association in 2006, Beijing China.
Salt Baked Chicken 鹽鋦雞

Stewed Pork Belly with Special Sauce 鍋燒醬爆肉
We especially love the Stewed Pork Belly with Special Sauce. Balanced amount of lean and fat meat, wrapped with great chunky texture, wok-fried with chef’s special sauce to coat a thick, sticky sweet layer onto each piece of pork belly, instantly flavour up the entire dish. We can have two bowls of rice with only this.
Braised Pork Ribs with Red Yeast Rice (with Steamed Bun) 紅谷口琴骨
Braised Pork Ribs with Red Yeast Rice is good too, but calls for a contrast texture with Stewed Pork Belly with Special Sauce. Instead of being chewy, the pork ribs are deep braised, resulting in mellow soft bites. Further dressed with a layer of Shanghai-style sauce that is clearly lighter, less greasy, accompanied by a faint hint of red yeast rice aroma.
All the five food selections we tried in Xin Cuisine are memorable, and has won approvals from regular guests to Concorde Hotel KL restaurant too.
